Matanzas
The ayuntamientos are to take charge of the slaughter of pigs for domestic consumption traditionally known as Matanzas. These take place between November 1st and March 30th. The decree from the Govern Balear is to guarantee hygiene conditions. A register of vets who collaborate will be created. It is hoped to prevent the spread of swine diseases such as Trichinosis. Some conditions have been imposed since 2000. Products obtained are now only for peoples own consumption and cannot be sold commercially. Families may only slaughter a limited number of pigs.
Vets must be given a sample of the meat, which is analysed and if results are negative the rest will be destroyed. Monthly reports will be slaughtered on the farms to make the traditional sausages, such as sobrasada, carnixua and camot.
